Chicken Pasta with Pesto

Today my friend, ADRIAN BEATY, local chef and all around kitchen ninja is sharing HIS CHICKEN PASTA WITH PESTO recipe with all of you.


Pasta with Central Park Farm’s Chicken, Cherry Tomatoes & Pesto

  • 8 oz. uncooked pasta

  • 2 tbsp olive oil

  • 1 lb chicken, julienned

  • 1 cup cherry tomatoes, cut in half

  • 1 package of your Chef’s Club pesto

  • 1/3 cup grated parmesan

  • Salt and pepper

Directions:   Cook pasta in a large pot of boiling, salted water until al dente; drain(reserve 1 cup cooking liquid).

While pasta is cooking, heat 2 tbsp olive oil in a large skillet over medium-high heat, add chicken; sauté 2 minutes. Add tomatoes, saute till chicken is cooked through.

Add pesto and drained pasta, combine well. Add some of the reserved cooking water if you prefer a “looser” sauce. Add parmesan cheese, toss to coat and serve immediately.
