Holiday Prime Rib Roast Deposit

This is a deposit only, balance is due at pick up or delivery prior to the Christmas holiday. The price for our prime rib roasts is $31/lbs.

At Central Park Farms, our beef is all 100% grass fed and grass finished — Our animals are never fed grain. The meat we sell comes from animals that have never been treating with any medications including antibiotics and are ever given growth hormones or steroids.

For superior flavour and tenderness, we dry age all our beef for 21 days. This is an expensive process but leads to the high-quality beef we’re known for.

Beef cooking temperatures: Remove beef when 5 degrees below desired temperature and let rest

  • Rare, cool red center: 125F

  • Medium rare, warm red center: 135F

  • Medium, warm pink center: 145F

  • Medium well, slightly pink center: 150F

  • Well done, little or no pink: 160F

General Rule of Thumb

  • 1 bone = 2 people (big eaters, you can plan 1 bone per person).

  • 3-bone roast (about 6–7 lbs) comfortably serves 6 people.

  • 4-bone roast (8–9 lbs) serves 8 people.

  • 7-bone roast (the whole rib section, 16–18 lbs) serves 14 people.

Please note that deposits are non-refundable unless we can resell your roast in which case we will happily refund it.
