We used our classic sausage roll recipe and made mini, bite-sized versions, perfect for grabbing between plays.
This time, we opted for our Sicilian Chicken Sausage — simply make them smaller and reduce the cooking time to about 12 -15 minutes, until golden and cooked through. You can make them as simple as you like, you can just remove the sausage from the casing and follow the directions, feel free to jazz them up like the recipe or keep it simple!Bavarian Pork Smokies

Beer Cheese Dip
Because nothing says game day quite like warm, melty beer cheese.
Yield: Makes about 1½ cups — perfect for 6–8 people as part of a board.

Ingredients:
2 tbsp butter
2 tbsp flour
½ cup beer (a light lager or ale works best)
½ cup milk + 2 tbsp (preferably whole milk, or half-and-half for extra richness)
1-½ tsp Dijon mustard
½ tsp garlic powder
¼ tsp onion powder
½ tsp smoked paprika
1½ cups sharp cheddar, grated (about 6 oz)
Salt & freshly cracked black pepper, to taste
1–2 dashes Worcestershire sauce
Spice it up! Add a dash of hot sauce or some sliced jalapenos if you want!
Instructions:
Melt butter in a saucepan over medium heat. Whisk in flour and cook for about 1 minute, until smooth and lightly bubbling.
Slowly whisk in beer, then milk, stirring constantly until the mixture thickens.
Add Dijon mustard, garlic powder, onion powder, smoked paprika, and Worcestershire.
Reduce heat to low and add cheese a handful at a time, stirring until melted and smooth before adding more.
Season with salt and pepper to taste. Serve warm.
Re-Heating Instructions
Beer cheese thickens as it cools — this is normal.
Stovetop:
Reheat gently over low heat, stirring often. Add a splash of milk or beer (1–2 tbsp at a time) to loosen as needed.
Microwave:
Reheat in 20–30 second intervals, stirring between each. Add a small splash of milk or beer if needed to bring it back to a smooth, dippable consistency.
This recipe doubles or triples beautifully if you’ve got a big gang coming over.
Double batch: Use a medium saucepan
Triple batch: Use a larger pot and keep the heat low
Hot tip: When scaling up, add the cheese slowly and lower the heat if needed to keep the dip smooth and creamy.
Make-Ahead Tip
You can make the beer cheese earlier in the day and reheat just before serving, perfect for stress-free hosting on game day. Store in an airtight container in the refrigerator for up to 3 days.
